What you need for ginger carrot dressing
This is such an easy salad dressing recipe. But you do need to take a couple of steps to prepare the ingredients, mainly chopping the main ingredients.
First chop some fresh ginger. Use a medium piece to yield about 2 tablespoons of freshly chopped ginger. You don’t need to be too precious about the exact size because this will all get blended.
Next chop about a quarter of a yellow onion. You can use more onion if you like your dressing on the onion side. Again, the size doesn’t matter, just chop into small pieces.
The last thing you’ll need to chop are your carrots. Chop up about a half a cup to one cup of carrots.
The other ingredients you’ll need are:
- Soy sauce
- Rice wine vinegar
- Vegetable oil
- White sugar
- Honey
How to make carrot ginger salad dressing
Making the ginger carrot dressing is so so easy. Just add all of the ingredients with the exception of the vegetable oil into a blender. Blend on medium high speed until creamy. Then slowly add the oil to emulsify the dressing. That’s it!


You can taste your dressing and tweak it. If you wanted a little sweeter, add more honey or sugar. If you like it more tangy add a bit more ginger. You can work with the base of this carrot ginger salad dressing, and make it to your liking.
Using Asian carrot ginger dressing
This is dressing that’s commonly used on simple salads at Japanese restaurants. But this is a very versatile sauce and you can use it for many things. Try using it to dip your vegetables or on a more complex salad with different vegetables.
You can keep your Asian ginger carrot salad dressing in the refrigerator for about a week.

Ingredients
- 2 Tablespoons minced ginger
- ½ cup rice wine vinegar
- 2 Tablespoons soy sauce
- ¾ cup chopped carrots
- ¼ cup onion (yellow or sweet)
- 1 Tablespoon white sugar
- ½ Tablespoon honey
- ½ cup vegetable oil

- Add all the ingredients with the exception of the vegetable oil to the blender. Blend on high speed until smooth, about 2 minutes. Slowly add the vegetable oil to emulsify.
