Ginger Carrot Dressing

Ginger carrot dressing is well worth making to have on hand for a sweet and zesty salad dressing, just like Japanese restaurants use.

  • blender or food processor

Ingredients

  • 2 Tablespoons minced ginger
  • ½ cup rice wine vinegar
  • 2 Tablespoons soy sauce
  • ¾ cup chopped carrots
  • ¼ cup onion (yellow or sweet)
  • 1 Tablespoon white sugar
  • ½ Tablespoon honey
  • ½ cup vegetable oil

Instructions

  • Add all the ingredients with the exception of the vegetable oil to the blender. Blend on high speed until smooth, about 2 minutes. Slowly add the vegetable oil to emulsify.
