A colorful dish, the best part (besides the bacon) of this arugula pear salad is the homemade dressing — a light honey mustard vinaigrette!
Arugula is a peppery green that’s actually in the same family as broccoli and watercress. The ingredients in this recipe, like blue cheese, pear, and carrots, make for the perfect salad dish.

What You’ll Need

- 1 package arugula salad
- 3 medium carrots
- 1 pear
- small block of blue cheese
- bacon
Dressing Ingredients:
A honey mustard vinaigrette is ideal for an arugula bacon salad. Mix 2 Tbs. olive oil, 2 Tbs. red wine, 1 tsp. Dijon mustard, and 2 tsp. honey. Or try other vinaigrette variations because vinaigrettes pair well with bacon salads.
- 2 Tablespoons olive oil
- 1 teaspoon red wine vinaigrette
- 1 teaspoon Dijon mustard
- 2 teaspoon honey

Instructions:
First, cut the carrots into small pieces, either round circles, shreds or chopped bits. Then, core the pear and cut it into slices, then cubes.
Crumble a fresh blue cheese chunk into smaller crumbles.
In a frying pan, cook the bacon slices starting from a cold pan until it heats to medium heat. Cooking the bacon more slowly will help the fat render out. Cook the bacon about 3 minutes per side, then drain them over paper towels. Finally, chop the bacon into sizable chunks
In a large bowl, add the arugula, carrots, pear and most of the bacon bits (reserving some for garnish). Add the dressing and toss. Sprinkle the remaining bacon pieces on top.

- Cut carrots into small pieces
- Cube pear
- Cut blue cheese into crumbles
- Make bacon, and cut into sizable chunks
- Mix olive oil, vinaigrette, honey and Dijon mustard for dressing
- Toss salad ingredients (reserving some bacon bits) with dressing using tongs. Garnish with remaining bacon bits.
- Add some black pepper to season.
