If you love bacon, but also love staying healthy, consider this arugula bacon salad with vinaigrette dressing.

A colorful dish, the best part (besides the bacon) is the homemade dressing — a light honey mustard vinaigrette.

Ingredients:

  • 1 package arugula salad
  • 3 medium carrots
  • 1 pear
  • small block of blue cheese
  • bacon

Dressing Ingredients:

  • 2 Tablespoons olive oil
  • 1 teaspoon red wine vinaigrette
  • 1 teaspoon Dijon mustard
  • 2 teaspoon honey

  • Cut carrots into small pieces
  • Cube pear
  • Cut blue cheese into crumbles
  • Make bacon, and cut into sizable chunks
