The gobbler sandwich, also called the Pilgrim sandwich, is an easy way to use Thanksgiving leftovers for a different lunch meal. Of course, you can make this recipe any time of year beyond Thanksgiving using the key ingredients of turkey, cranberry sauce, mashed potatoes, stuffing, and gravy.

The Gobbler is one of the best ways to use nearly all of your Thanksgiving leftovers combined into one bite. After all, when you make a sandwich, you simply assemble the ingredients. You don’t have to cook another meal. (This sandwich recipe uses the exact same ingredients as the Gobbler at Wawa, and other “gobbler” sandwiches.)

How to Make the Gobbler Sandwich

For this roast turkey sandwich, you’ll need dinner rolls, of course, roast turkey, mashed potatoes, cranberry sauce, stuffing, and gravy.

This gobbler recipe makes four little sandwiches, but of course you can multiply the recipe or even just make one sandwich.

Using average size dinner rolls, you’ll need about:

  • 4 bread rolls
  • 1-2 cups roast turkey meat
  • salt and pepper seasoning
  • 1/3 cup cranberry sauce
  • 2/3 mashed potatoes
  • 2/3 cup stuffing
  • 1/4 cup gravy

Keep in mind that the exact amounts aren’t critical. You’ll simply be building a sandwich with the layers of different Thanksgiving leftovers. use amounts that are appropriate to the size of your sandwich.

Start by using a bread knife to slice each dinner roll in half. Then stack some roasted turkey on the bottom half of each roll and season with a little salt and pepper.

Next spread a nice layer of cranberry sauce on the roasted turkey.

Top that with a thick layer of mashed potatoes. Sprinkle some stuffing on the top of the mashed potatoes. You can press the stuffing down gently to help it stay in place.

Then on the top portions of the rolls, spread some gravy, just as you would spread mayonnaise on a bread. Add a little salt and pepper to the top portion of the sandwich.

Finally place the top of the dinner roll with the gravy onto the bottom roll that is stacked with your Thanksgiving leftover ingredients and press down firmly.

How to Serve a Gobbler Sandwich

The gobbler sandwich is just as easy to serve as it is to make. It’s perfectly delicious served with the room temperature roll and cool, roasted turkey, mashed potatoes, cranberry sauce, and gravy.

But you can make a hot gobbler sandwich by either popping the whole thing in a toaster oven, or preheating the turkey, mashed potatoes and gravy, and using toasted rolls.

You can also make the sandwiches in advance and keep them in the refrigerator for a few days. In this case, consider skipping the step where you add the gravy to the top of the roll because it may result in a mushy roll. Instead, add the gravy spread just before you eat the sandwich.

Ingredients

  • 4 bread rolls
  • 1-2 cups Turkey meat
  • salt and pepper seasoning
  • 1/3 cup cranberry sauce
  • 2/3 mashed potatoes
  • 2/3 cup stuffing
  • 1/4 cup gravy

Instructions

  • Use a bread knife to slice bread rolls in half. Arrange in a row for easy assembly with the sandwich ingredients.
  • To the bottom piece of each roll, add: a layer of turkey breast, a bit of salt and pepper, a layer of cranberry sauce and then mashed potatoes. Top with stuffing bits.
  • To the top of each roll, smear about 1 – 2 teaspoons of cooled, thickened gravy. Spread the gravy on the roll just as you would spread mayonnaise. Add a bit of salt and pepper.
  • Place the top of each roll onto the stacked bottom section and press slightly firmly to create a Gobbler sandwich.
  • Serve immediately or keep in the refrigerator for 2 to 3 days. If you are making your Gobbler sandwiches in advance, consider skipping the step of adding the gravy. Instead, spread the gravy to the top layer right before serving so that the rolls don't get soggy.
