Gobbler Sandwich

The Gobbler sandwich, or the Pilgrim sandwich, is the perfect recipe to use Thanksgiving leftovers. Of course, you can make this easy turkey sandwich any time of year.

Ingredients

  • 4 bread rolls
  • 1-2 cups Turkey meat
  • salt and pepper seasoning
  • 1/3 cup cranberry sauce
  • 2/3 mashed potatoes
  • 2/3 cup stuffing
  • 1/4 cup gravy

Instructions

  • Use a bread knife to slice bread rolls in half. Arrange in a row for easy assembly with the sandwich ingredients.
  • To the bottom piece of each roll, add: a layer of turkey breast, a bit of salt and pepper, a layer of cranberry sauce and then mashed potatoes. Top with stuffing bits.
  • To the top of each roll, smear about 1 - 2 teaspoons of cooled, thickened gravy. Spread the gravy on the roll just as you would spread mayonnaise. Add a bit of salt and pepper.
  • Place the top of each roll onto the stacked bottom section and press slightly firmly to create a Gobbler sandwich.
  • Serve immediately or keep in the refrigerator for 2 to 3 days. If you are making your Gobbler sandwiches in advance, consider skipping the step of adding the gravy. Instead, spread the gravy to the top layer right before serving so that the rolls don't get soggy.
