Roasted red cabbage makes the beautiful and scrumptious side dish for so many meals, and it’s surprisingly fast and easy to make. Once you try baking chunks of cabbage, especially with this steaming process that gives it the perfect texture, you’ll see how this vegetable can transform into a flavorful bite.

What You’ll Need
Making roasted purple cabbage is so easy, you’ll only need a few ingredients. For four wedges of cabbage you’ll need:
- ½ head of red cabbage
- 2 Tablespoons olive oil
- salt
- pepper
Then you can dress it up how you like with sesame seeds, for example with a drizzle of balsamic glaze or a splash of soy sauce. But, like many roasted veggies, its delicious on it’s own!
How to Bake Red Cabbage
First, preheat oven to 500°. You’ll want this nice high temperature to help steam the cabbage. Steaming helps cook all the cabbage leaves thoroughly so they will soften.
In this recipe, we’re making four wedges, which is half of a head of cabbage. When you cut the half of a head of cabbage into quarters, make sure you cut through the stem to keep the cabbages leafs together. The wedges will still be delicate so handle them gently so the leaves don’t break off.

Place the four red cabbage wedges on a baking pan, then brush them with a bit of olive oil and sprinkle with salt and pepper to season them. Then flip the cabbage pieces and do the same on the other side: sprinkle with salt and pepper and drizzle with olive oil. Cover the baking pan with aluminum foil.

Steam the cabbage wedges for about 20 minutes. The remove the foil, reduce the oven temperature to 425° and bake for another five minutes. Use a spatula to very gently flip the wedges to brown the other side.


Sprinkle with sesame seeds and/or balsamic glaze and serve warm.
