Looking for an exotic savory cocktail that goes beyond the average dirty martini? Look no further than a Pho-inspired martini. Pho is a complex Vietnamese soup with gentle umami flavors that brings you back for more and more.
For this drink, you’re going to start by making a flavor-packed simple syrup. Yes, this is a savory martini, but it does include a few sweet notes, just like traditional Pho.

How to Make Pho Spice Simple Syrup
Here’s what you’ll need to make a simple syrup brimming with Pho spices:
- 1 cup white sugar
- 1 cup water
- 3 cardamom pods
- 1 cinnamon stick
- 1 star anise
Then, you simply make the simple syrup just as you would make any simple syrup: Add the ingredients to a sauce pan and bring to a boil. Immediately reduce the heat and simmer for 10 minutes. Use a wire mesh strainer to strain into a jar or heat resistant container and allow it to cool.
Making the Pho Martini
Now that you have your simple syrup, you can use it as the base of your Pho martini. In a shaker add:
- 1 ounces gin
- 1 ounce lime juice
- ½ ounce Pho simple syrup
- ½ teaspoon sriracha (one bar spoon)
- ½ teaspoon fish sauce
- 2 dashes orange bitters
Add ingredients to a shaker with ice. Shake and strain into a chilled martini glass. Garnish with lime and a star anise.
You’ll have enough simple syrup to make several martinis.
