Granola pancakes have an extra texture that gives a fluffy pancake recipe and added twist. When you use granola in pancakes, the granola adds more of a soft nutty texture, not the crunch you may expect. It works surprisingly well in pancakes!
You can use any type of granola for these pancakes, but try to avoid granola with other chunky ingredients like chocolate or nuts. Look for granola that is mainly toasted oats. You won’t need clumpy granola, but if you have clumpy granola on hand, you can just crumble into smaller bits.
You can also make your own homemade granola! Try this Toasted Coconut Granola recipe! It’s a recipe for clumpy granola, but the oat grains are the perfect texture for granola pancakes!
Ingredients for a Granola Pancakes Recipe
The ingredients for granola pancakes are essentially the same as you would use to make the perfect breakfast pancakes — airy and fluffy! But, after you combine the ingredients, you’ll simply stir in your crumbly granola.
Here’s what you’ll need to make the best pancakes with granola:

- 1 egg
- 1½ cup milk
- 1 teaspoon vanilla
- ¼ cup white granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1¼ teaspoon baking powder
- 2 tablespoons melted butter
- ⅔ cup granola
How to Make Granola Pancakes
To make granola pancakes, you’ll start by whisking the egg, milk and vanilla (wet ingredients) together in one mixing bowl. Whisk briskly so the mixture is bubbly and airy.

In another bowl, stir the dry ingredients together (sugar, flour, salt, and baking powder). Keep whisking as you slowly add the dry ingredients to the egg and milk mixture.

Then keep whisking as you add in the butter.

Then, using a spoon or spatula, gently mix in the granola just until it is blended evenly. Allow the granola pancake batter to rest for several minutes.

On a skillet on medium heat (sprayed lightly with cooking spray), place dollops of the batter, about ¼ cup. Place as many pancakes in the pan as it will hold with ample space between them. The amount of pancakes you will cook at one time will depend on the size of the pan.

Once the bottoms of the pancakes have browned (about three minutes) flip and cook until the other side browns, about another 2 – 3 minutes. Repeat the process for the remaining batter.

How to Serve Granola Pancakes
Serve granola pancakes warmed topped with butter, a little extra granola, maple syrup, or your favorite topping.
You can add even more flavors to this dish by adding bits of fruit to the mixture to make recipes like banana granola pancakes or blueberry granola pancakes. Simply add about 1/2 to 2/3 cup of fruit to the batter at the last stage, and gently stir to combine evenly, just as you combined in the granola.
