Whisk the egg, milk and vanilla together in one mixing bowl. In another, stir the dry ingredients together (sugar, flour, salt and baking powder).
Keep whisking as you slowly add the dry ingredients to the egg and milk mixture. Then keep whisking as you add in the butter. Then, using a spoon or spatula, gently mix in the granola just until it is blended evenly. Allow the granola pancake batter to rest for several minutes.
On a skillet on medium heat (sprayed lightly with cooking spray), place dollops of the batter, about ¼ cup. Place as many pancakes in the pan as it will hold with ample space between them. The amount of pancakes you will cook at one time will depend on the size of the pan.
Once the bottoms of the pancakes have browned (about three minutes) flip and cook until the other side browns, about another 2 - 3 minutes. Repeat the process for the remaining batter.
Serve granola pancakes warmed topped with butter, a little extra granola, maple syrup, or your favorite topping.
