What You’ll Need

Most of the ingredients for this simple crispy kale salad recipe are ones you’ll likely have on hand already:

  • Kale
  • Olive oil
  • Garlic powder
  • Onion powder
  • Sea salt
  • Black pepper
  • Fresh lemon juice
  • Cayenne
  • Grated Parmesan cheese

How to Make Kale Salad

First, preheat oven to 350°. If you have kale with the stems still intact, you’ll want to remove them since they are fairly tough even after baking. Next, “massage” your kale by using your hands to gently squeeze the leafy greens. This just makes the kale a little softer.

Next, add the kale to a large mixing bowl and drizzle it with olive oil. Then sprinkle in garlic powder, onion powder, salt, pepper, lemon juice, cayenne and Parmesan cheese. Mix thoroughly so the ingredients combine evenly.

Then, spray two baking sheets with baking spray and spread the kale onto them in a single layer. Bake at 350 degrees for about 15 minutes or until crisp, taking care not to burn the kale.

Add the crispy kale to a serving bowl and top with a little extra Parmesan for garnish.

Crispy kale is best served right after baking, but you can also store it in the refrigerator for several days. However, keep in mind it will likely lose its crispiness (but not it’s deliciousness) as leftovers!

Ingredients

  • 10 ounces kale
  • Tablespoon olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ Tablespoon lemon juice
  • teaspoon cayenne
  • 3 Tablespoon Parmesan cheese

Instructions

  • Preheat oven to 350°.
  • Remove the thick stems from the kale. Use your hands to "massage" the kale by squeezing it to soften it. Add to a large mixing bowl and drizzle with olive oil.
  • Add garlic powder, onion powder, salt, pepper, lemon juice, cayenne and Parmesan cheese. Mix to combine.
  • Spread the Kale onto two baking sheets in a single layer. Bake for about 15 minutes or until crisp, taking care not to burn the kale.
  • Add the crispy kale to a serving bowl and top with a little Parmesan for garnish.
