How to make chocolate cherry scones
First, preheat your oven to 400°.
Halve and pit about 1 cup of fresh cherries, then chop the halves into smaller bits to yield 2/3 cup of chopped fresh cherries. To pit the cherries, cut them in half and use a knife to scrape out the pit, or use a cherry pitter to pop out the pits. Add the chopped cherries to a bowl with 1/3 cup chocolate chips and set aside.

Then, in another bowl, whisk together: 1 egg, ½ cup of buttermilk (or cream), and the ½ teaspoon of almond extract.
In a large mixing bowl, combine the dry ingredients, (all-purpose flour, sugar, salt, and baking powder).
Chop a stick of cold butter into small cubes. Add the cubes to the dry ingredients. Using your hands, a fork or a pastry cutter, cut the cold butter into the dry ingredients until they are smaller pieces, about the size of a pea.
Add the cherries and chocolate chips to the flour/butter mixture and stir gently to coat and combine. Then, create a little well in the center of the dry ingredients, and pour the wet ingredients in. Use a spoon or spatula to combine until all the dry ingredients are moist. Chill the dough in the refrigerator for about 15 minutes. (The dough may be slightly colored from the cherry juice, which is totally OK.)
Once the scone dough has chilled, you’re ready to make your scones. You can make your scones into any shape, such as triangles or round drops. You can start by gently shaping the dough into a ball on on a lightly floured surface, taking care not to overwork it.

Use a floured rolling pin to flatten the dough ball into a disc, about 1 inch thick. Then use a 1/4 cup to cut out scoops of the dough. Create flattened mounds and transfer to a baking sheet lined with parchment paper. Alternatively, you can use a knife to cut the disc into 6 or 8 triangular scones.
No matter what size and shape you make your scones, just be sure they are all about evenly sized.
In a small bowl, create an egg wash by whisking 1 egg and 1 Tablespoon of water (or cream/milk). Brush the scones with the egg wash and sprinkle with a little granulated white sugar.

Bake at 400° for about 18 minutes, just until they turn golden brown.
