Udon Stir Fry

Learn the basics of making an udon stir fry, then adjust it to your liking with the vegetables you have on hand. This easy udon noodle recipe is one to keep in your back pocket!

Ingredients

  • 7 oz dried udon noodles (½ of a 14 oz package)
  • 3 garlic cloves
  • 2 Tablespoons olive oil
  • 1 Tablespoon grated ginger
  • 1 teaspoon chili oil (optional for spicier version)

Teriyaki for udon noodles

  • 3 Tablespoons soy sauce
  • 1 Tablespoon mirin
  • 1 Tablespoon toasted sesame oil
  • 1 teaspoon sugar

Vegetables in this recipe (change to your liking)

  • cup baby bell mushrooms
  • 3 mini sweet orange peppers
  • 2 scallions, chopped (white half)

Instructions

  • Cook udon noodles according to instructions, typically by boiling for 8 minutes. Drain, rinse with cool water, and set aside.
  • In a small bowl, whisk together the ingredients of the teriyaki sauce: soy sauce, mirin, sugar and toasted sesame oil.
  • Heat olive oil in a pan on medium high. Add baby bell mushrooms, white scallions, and chopped orange peppers and saute about 3 minutes. Add garlic and ginger and saute another minute. Add noodles and teriyaki sauce, stirring to coat the noodles. Continue saute another 2- 3 minutes.
  • Transfer the udon noodle stir fry to two plates. Garnish with green scallions and white sesame seeds and serve warm. (For a spicier dish, drizzle with chili oil.)
