Spiral Cucumber Salad
Cutting cucumbers into spiral shapes to get a cucumber salad is the latest cucumber trend! You can use a variety of dressing, including this soy-based spicy marinade.
- 3 mini cucumbers
- 2 garlic cloves, minced
- 1 Tablespoon soy sauce
- 1 Tablespoon sugar
- 1 Tablespoon sriracha
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds
- 1 Tablespoon green onion or chives
Place a cucumber between two disposable chopsticks and cut on a diagonal so that you cut through nearly all the way, but not past the chopsticks. Flip the cucumber over and make straight slices. The result should be a cucumber spiral. Cut it into pieces if desired.
Add the remaining ingredients (with the exception of the sesame seeds and green onions/chives garnish) into a small bowl and whisk to combine.
Add the cucumbers to a serving bowl and top with marinade. Top with sesame seeds and chopped green onions or chives.
