Equipment

  • sushi rolling mat
  • rice cooker or sauce pan with lid
  • saran wrap

Ingredients

  • 2 sheets Nori
  • 2 - 4 pieces smoked salmon
  • 4 oz cream cheese
  • ½ cucumber
  • 2 cups sushi rice
  • 1 teaspoon sesame seeds (optional)

Sushi Rice Vinegar

  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

Instructions

  • Prepare sushi rice by cooking short or medium grain rice according to instructions. Typically you will use a 1:1 ratio. With a rice cooker, simply add the ingredients and press start. With a sauce pan, bring the ingredients to a boil and then reduce the heat and simmer about 15 minutes until the water has absorbed.
  • Make seasoning for the rice by combining rice wine vinegar, sugar, and salt. You may need to gently heat the ingredients to combine them so that the sugar and salt dissolve. Drizzle the seasoning vinegar over the sushi rice and cut the rice with a spatula or large spoon to coat each grain evenly.
  • Place a sheet of nori facing rough side up with the perforations running parallel to the sushi rolling mat. Cover the nori evenly with one cup of sushi rice, leaving about ½ inch edge at the top.
  • Add optional sesame seeds, sprinkling evenly over the rice. At this stage, you can flip the nori sheet over so the rice side is facing down if you want the rice on the outside of your Philly roll. Or, you can leave the rice side facing up to include the rice on the inside of the roll.
  • Remove the seeds from the cucumber and cut the cucumber into thin batons. Add a row of cream cheese, salmon, and cucumber batons in a line roughly at the bottom third of the Nori.
Use the sushi rolling mat to lift the bottom of the nori over the ingredients and into a roll. Gently squeeze the mat and roll once more to complete the sushi roll.
  • Use a sharp knife to slice the Philadelphia sushi roll into even pieces. Serve with soy sauce, ginger, and/or wasabi.
