Maryland Crab Toast

Ingredients

  • 1 Cup Maryland Lump Crab (Handpicked or purchased fresh)
  • 1 Avocado, cubed
  • 1/3 Cup Mayonnaise
  • 1 Teaspoon Red Wine Vinegar
  • 1/2 Teaspoon Sugar
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1 Tablespoon Old Bay seasoning
  • 2 Tablespoons Olive Oil
  • 3-5 Slices Sourdough, Ciabatta, or French Bread
  • 3 Tablespoons Watercress

Instructions

  • Mix Old Bay and Olive Oil to form a paste. Brush each slice of bread with the mixture and then toast lightly. Set toasted bread aside.
  • Core and cube an avocado. Combine in a bowl with Maryland lump crab meat, mixing very gently.
  • In a separate bowl, whisk mayonnaise, vinegar, sugar, salt and pepper. Gently add the avocado and crab mixture, taking care not to chop the avocado and crab. Simply coat the avocado and crab with the mayonnaise mixture.
  • Top each slice of toast with the Maryland crab and avocado mixture.
  • Top each Maryland crab toast with a few pinches of watercress.
