Lime Rice Without Cilantro

Lime rice without cilantro is an easy side dish that add extra flavors to plain rice, including coconut from coconut milk. Lime rice often has cilantro, but here's the best way to make lime rice without using any cilantro.

Equipment

  • rice cooker or pot with a lid

Ingredients

  • cups long grain white rice
  • 1 cup chicken broth (or water)
  • 1 can coconut milk (13.6 oz)
  • 1 lime
  • 1 tablespoon fresh chopped basil (optional)

Instructions

  • Rinse the rise in a wire mesh seive until the water runs clean.
  • Use a grater to zest one lime to yield about ½ tablespoon of lime zest. Squeeze the lime juice into a small bowl.
  • Place the rice, coconut milk, chicken broth in the rice cooker and cook until finished. If you are using a pot, put the ingredients in and bring to a boil. Reduce to a simmer and cook for about 15 minutes with the lid on until the liquid has absorbed.
  • Allow the rice to continue absorbing the liquid off the heat for about 5 minutes then fluff it with a fork. Add lime juice, lime zest and optional) basil and stir. Garnish with lime slices and basil. Serve warm.
