- 1 pound fresh salmon
- 2 -3 tablespoons blackened seasoning
- 1 tablespoon olive oil
Honey Lime Glaze
- 3 tablespoons butter
- 2 tablespoons honey
- 1 lime (1 teaspoon juice, 1/2 tablespoon zest)
- ¼ teaspoon salt
Pat salmon fillets dry with a paper towel and cut into pieces about 3 inches, or however large you'd like your serving size. Coat each fillet with blackened seasoning.
In a cast iron skillet or frying pan, heat olive oil. On medium heat, place your salmon fillets and cook about 3 - 4 minutes. Flip when the seasoning darkens and the fish has cooked about 1/2 through. Cook another 3 minutes on the other side until the fish is 145 degrees.
Transfer the blackened salmon onto a serving platter.
To make the honey lime glaze, first melt the unsalted butter in a small pot. Mix in honey and lime zest (the zest of one half lime, about ½ tablespoon.) Salt to taste. Use a spoon to pour the honey lime sauce over the blackened salmon to create a glaze. Garnish with the remaining lime zest.
