Preheat oven to 350°. Line a baking sheet with parchment paper. Layout 8 - 10 slices of bacon. Once the oven is hot, bake for about 10 minutes.
Remove the partially cooked bacon from the oven and add a line of honey down each one. You do not need to use a brush to spread the honey. Sprinkle lightly with cayenne pepper. Return the bacon to the oven for another 10 minutes, or until bacon is golden brown but not burned.
In a small skillet, toast the sesame seeds until golden brown and aromatic, about 5 minutes on medium low. Put aside.
Once the bacon is finished, allow it to cool on a baking rack or a plastic cutting board. DO NOT use paper towels to drain the bacon because the glaze is sticky.
As the bacon cools, sprinkle the toasted sesame seeds on top.
Serve as a side for breakfast, or cut into halves and use as part of an appetizer spread.
