Pear Chutney Recipe
- ⅓ cup apple cider vinegar
- ½ cup white sugar
- 2 pears
- 1 tablespoon lemon juice (about ½ lemon)
- ½ teaspoon cinnamon
- pinch ground clove
- pinch salt
Pear Grilled Cheese
- 4 slices Country loaf (or white or brioche)
- 2 tablespoons softened salted butter
- 4 slices raclette cheese
Pear Chutney Recipe
In a medium sized sauce pan, heat apple cider vinegar and sugar on medium low heat until the sugar dissolves.
Core and stem pears by cutting them in half and removing the core with a sharp small knife. Finely dice the pears. Immediately add to the sauce pan.
Add lemon juice, cinnamon, ground clove and salt to the sauce pan and stir to combine.
Bring the mixture to a boil and then reduce heat to a simmer. Allow the pear chutney to simmer until the pears are soft, about 30 to 40 minutes. Stir occasionally.
Pear Grilled Cheese
Butter four slices of bread on one side. With the buttered side of the bread facing out, assemble two sandwiches by adding two slices of raclette cheese and a layer of pear chutney.
Heat a skillet to medium low heat. Place the sandwiches until the bottom has turned a golden brown. Then, using a spatula, flip the sandwich and brown the other side. Cut pear grilled cheese on a diagonal and serve warm. (If the raclette cheese has not melted, place the sandwiches in the oven at 350° until the cheese becomes soft and melty.)
