Greek Yogurt Granola Parfait
A greek yogurt granola parfait is a sweet breakfast bite you can make in advance with layers of yogurt, blueberries, granola, and chopped nuts.

- ½ cup granola
- 1-2 cups greek yogurt
- 1 Tablespoon honey
- ½ cup fresh blueberries
- 2 tablespoons hemp hearts
- ¼ teaspoon ground cardamom (or cinnamon or nutmeg)
- ¼ cup mixed nuts (can include dried fruit)
Add ¼ cup of granola to each of 2 parfait cups.
Add a layer of greek yogurt to each, spreading to the sides of the cup. Add a drizzle of honey and ¼ cup of blueberries to each cup. Sprinkle 1 tablespoon of hemp hearts (hemp seeds) and a dash of ground cardamom.
Add another layer of greek yogurt, spreading evenly like icing.
Finely chop trail mix such as a mix of cashews, almonds and dried cranberries. Top each cup with a coating of finely chopped mixed nuts. Serve immediately or keep in the refrigerator for up to 2 to 3 days.
