Cowboy Mashed Potatoes
Adding just the right blend of spices to your mashed potatoes can take them up a notch. This cowboy mashed potato recipe gives your mashed potato side dish a kick of spice!

- 3 Russet or Yukon Gold potatoes (about 3 lbs.)
- ½ cup butter
- ⅓ cup milk
- 2 teaspoons salt
- 1 teaspoon black pepper
Cowboy Spices
- 1 Tablespoon Dijon mustard
- 1 Tablespoon Fresh Chopped Chives
- 2 Tablespoons Fresh Chopped Parsley
- 4 Cloves Garlic, minced
- 2 teaspoons Paprika
- ½ teaspoon cayenne
- ½ teaspoon chili flakes
- ½ teaspoon lemon zest
Peel the potatoes and cut them into cubes. Boil in salted water for about 20 - 25 minutes, until fork tender. Drain in a colander.
In a small bowl combined, the fresh chopped herbs and spices and mix well.
Add the potatoes to a mixing bowl and add butter, milk, salt and pepper and bowl of cowboy spices. Use a potato masher to combine thoroughly.
