Chopped Caprese Salad
A chopped caprese salad include essentially a tomato mozzarella salad with a balsamic vinaigrette. Here's how to make this easy caprese salad using fresh basil.
Servings: 8
- 24 oz cherry tomatoes (about 4 cups)
- 8 oz mozzarella
- ΒΌ cup basil leaves
- 1 teaspoon fine sea salt
- pepper
- balsamic glaze (optional)
Balsamic Honey Vinaigrette
- 3 Tablespoons olive oil
- 1 tablespoon Balsamic vinaigrette
- 1 tablespoon honey
- salt
Wash 4 cups of cherry tomatoes. Cut tomatoes in half and place in a large bowl.
Cut an 8 oz mozzarella ball into small cubes and add to the bowl.
Finely chop about 1/4 cup of basil leaves and add to the bowl. Add salt and pepper for seasoning.
Balsamic Vinaigrette
In a small bowl, whisk together: 3 tablespoons of olive oil, 1 tablespoon of vinaigrette, and 1 tablespoon of honey.
Drizzle the balsamic dressing onto the chopped caprese salad and toss gently. Garnish with a drizzle of balsamic glaze and a bit of extra basil.
