Chopped Caprese Salad

A chopped caprese salad include essentially a tomato mozzarella salad with a balsamic vinaigrette. Here's how to make this easy caprese salad using fresh basil.

Ingredients

  • 24 oz cherry tomatoes (about 4 cups)
  • 8 oz mozzarella
  • ΒΌ cup basil leaves
  • 1 teaspoon fine sea salt
  • pepper
  • balsamic glaze (optional)

Balsamic Honey Vinaigrette

  • 3 Tablespoons olive oil
  • 1 tablespoon Balsamic vinaigrette
  • 1 tablespoon honey
  • salt

Instructions

  • Wash 4 cups of cherry tomatoes. Cut tomatoes in half and place in a large bowl.
  • Cut an 8 oz mozzarella ball into small cubes and add to the bowl.
  • Finely chop about 1/4 cup of basil leaves and add to the bowl. Add salt and pepper for seasoning.

Balsamic Vinaigrette

  • In a small bowl, whisk together: 3 tablespoons of olive oil, 1 tablespoon of vinaigrette, and 1 tablespoon of honey.
  • Drizzle the balsamic dressing onto the chopped caprese salad and toss gently. Garnish with a drizzle of balsamic glaze and a bit of extra basil.
