Blueberry Raspberry Compote
Making blueberry raspberry compote is very simple. It's essentially a mixed berry compote made with a bit of sugar and cornstarch as well as some cardamom. Use as a topping or pastry filling.

1 Sieve
1 Sauce Pan
1 Mixing Spoon
1 Small Serving Bowl
- 1 cup Blueberries
- 1 cup Raspberries
- 1 Tbl Lemon Juice
- 3 Tbl White Sugar
- 1 tsp Cornstarch
- 1 Tbl Water
- 1/2 tsp Cardamom
Wash the blueberries and raspberries in a sieve.
Add blueberries, raspberries, lemon juice, sugar, cornstarch, water and cardamom to a sauce pan. Heat slowly over medium low heat. (If you don't have cardamom, you can substitute nutmeg or cinnamon.)
Let the mixture simmer about 10 minutes, or until the berries are softened, but sill have some chunks.
You can use a blueberry raspberry compote to top pancakes, waffles, ice cream, oatmeal and much more. The mixture will keep in the refrigerator about two weeks.
