Teriyaki Udon

Udon stir fry is the perfect dish to make when you’re looking for a fast and delicious dinner dish, bursting with flavor and comfort. 

Here, you’ll learn the basics for making a perfect udon noodle stir fry, and then you can tweak this dish using vegetables you have on hand or your favorite additions.

What You’ll Need

Udon noodles in a box

Udon noodles: Use about 7 ounces of dried noodles, or half a 14 oz package. You can also use the frozen or shrink wrapped udon noodles. Just cook them according to the instructions, which are usually to boil for a few minutes.

Mushrooms: Absolutely any mushrooms will do. With this udon stir fry recipe, we used baby bells.

Sweet orange peppers: Again, you can substitute your favorite vegetable here and stir fry it accordingly.

Olive oil: Used for sautéing the veggies. Any neutral oil will do.

Garlic: We’re using three cloves, minced. Add the garlic at the end of stirfrying your veggies so you don’t burn it and create a bitter taste.

Ginger: Peel a thumb of ginger and grate to yield about 1 tablespoon.

Garnish: Top with green scallions and a bit of toasted white sesame seeds.

Teriyaki sauce:

1 tablespoon mirin

3 tablespoon soy sauce

1 Tablespoon toasted sesame oil

1 teaspoon sugar

How to Make it

First, cook the udon noodles according to the instructions, typically by boiling for 8 minutes. Drain, rinse with cool water to stop them from cooking more, and set them aside. You want udon noodles to be chewy, on the al dente side.

Next, make some homemade teriyaki sauce. In a small bowl, whisk together the ingredients of the teriyaki sauce which are essentially: soy sauce, mirin, sugar and toasted sesame oil.

Then it’s time to stir fry your veggies. Heat olive oil in a pan on medium high. Add the veggies (here we used baby bell mushrooms, white scallions, and chopped orange peppers) and saute about 3 minutes, depending on the type of vegetable.

Toward the end of sauteeing, add garlic and ginger and saute another minute.

Finally, add the udon noodles and homemade teriyaki sauce, stirring to coat the noodles. Continue to cook another 2- 3 minutes as the ingredients combine.

Using tongs, transfer the udon noodle stir fry to two plates. Garnish with green scallions and white sesame seeds and serve warm. (For a spicier dish, drizzle with a little chili oil.)
