Cowboy butter is a spicy flavorful butter that’s great to have on hand as your go-to butter for savory dishes or sides. It only takes a few minutes to make, and the results are well worth it!
This is a popular zesty butter to use with grilled steaks, chicken, green beans, rice and much more.
What You’ll Need
You likely already have all you need to make Cowboy Butter, especially if you have your own herb garden. The ingredients are: a stick of unsalted butter, fresh chives, thyme, garlic, lemon juice, lemon zest, paprika, salt, pepper, red pepper flakes and cayenne pepper.
How to Make It
First, allow the stick of butter to soften and add it to a small mixing bowl. You don’t necessarily need the butter to be room temperature soft, just enough so you can mask it with the other ingredients.

Then, just add all of the ingredients, including the herbs and spices, and use a fork to combine everything well. It’s that easy!

Once your butter compound is well combined, place the butter in a mound on a sheet of parchment or wax paper and then roll it into into a log. Twist the ends to tighten the roll.
Place the roll of Cowboy Butter in the fridge to firm for at least an hour.

Try sautéing veggies with Cowboy butter or use it as a spread on bread or toast.
Remove the Cowboy Butter from the parchment paper and cut into slices. You can keep it sealed in the refrigerator for about a weeks. Or, you can freeze it for up to four months, then just thaw it in the refrigerator for 24 hours before you plan to use it.

Cowboy Butter
Ingredients
- 1 stick unsalted butter, softened (1/2 cup)
- 1 Tablespoon chopped fresh chives
- 3 teaspoons chopped fresh parsley
- 1½ teaspoons chopped fresh thyme
- 2 cloves garlic, minced (about 1½ teaspoon)
- 1 teaspoon lemon juice
- ¼ teaspoon lemon zest
- ½ teaspoon paprika
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- ⅛ teaspoon cayenne pepper
Instructions

- Place the butter on a sheet of parchment or wax paper. Roll the butter into a log and twist the ends to tighten. Place the roll of Cowboy Butter in the fridge to firm for at least an hour.
